As their Spanish supervisor looks on, four Peruvian workersless costly to employ than their Chilean counterparts—on the U.K.-flagged factory ship Gambler are dedicated almost solely to cutting Chilean sea bassa level of specialization unheard of on traditional fishing boats.

As longlines are mechanically reeled in, they fill bins in the cutting room, which must be constantly emptied to avoid costly backups. Here, haste, electric saws, knives, and slick conditions add to the dangers toothfishers face.
