In Mali, men are forbidden to enter the kitchen; it is also a very shameful act for a man to cook. Above, a woman prepares a Mali dish. Western culinary practices are colliding with Mali traditions, and metal bowls replace calabash bowls. Pork is usually absent in Malian cuisine, since approximatley 90 percent of Mali is Muslim.
